PB&J STILL REIGNS AS MY FAVORITE :D

Today my dance team is going to the pumpkin patch and I am so excited to get a Caramel Apple, and a pumpkin to carve!
I am thinking of maybe carving it similar to Lady Gaga's Poker face.

I haven't posted or baked in such a long time, So sorry to all my zero followers, hehe.

My Addiction is Icing on the Cupcake, yes yes.. I was never really into, but recently found a deep love for it!
My favorites as of now are the PB&J, Pucker Up(Lemon), and the Vanilla. I'm not much of a chocolate person so I couldn't give you my opinion on those.

But....... The NEW flavor of the month, October, is Caramel Corn. I just had a piece of it, and it was delicious! Its on the sweeter side if you are into that sweet buttercream flavor :3

I hope you consider visiting at the Rocklin or the Folsom Location, and pay attention to the "Whisper Days"!

The New Flavor of the Month at Icing on a Cupcake is Blackberry Cobbler, I've been dying to try it the past week, and I must say it was delicious. The Blackberry infused cake and frosting with the little berry on top was just delicious!

I also tried Pistachio, & the always favored PB&J.
Lets just say, pistachio should stay in the nut :/ and PB&J seemed extremely savory tonight!

They definitely boosted my mood and ended my tragic day on a positive note :D

School is right around the Corner! So we all know what that means.. School Shopping and Supplies?!

Yet another recipe I sure do love is the Caramel Apple Cupcake from Icing on the Cupcake! Definitely one of their bests. In my recreation, I used a Caramel Apple Spice Bread Mix, from Sweet Seasons.

You have your usual ingredients for the cupcakes, but you will need a few other things for the scrumptious Cream Cheese Frosting and Caramel Drizzle.

First, you need 2 8oz packages of cream cheese, 1/2 Cup of Un-Salted Butter, & 1 Tsp of Vanilla.
Cream together the cream cheese and butter, then add the tsp of vanilla. Once that is mixed up add 2 Cups of Confectioners Sugar. Then, WuhhLa.

I had to make a second batch of the Caramel Drizzle because I hadn't read through the directions, which turned into a mess of butter and cream. With 1 Cup of Sugar, 6 Tbsp of Butter, and 1/2 Heavy Whipping Cream.

On Medium-High heat, heat up the sugar and continue stirring until it is completely melted with an amber color. Then immediately add the butter. Once those are mixed together, remove from heat and count to three, then add the cream.
The longer you wait to use the Caramel, the thicker the substance will be.

Drizzle the top and Enjoy!

After scarfing down a dozen of Sprinkles Cupcakes©, I narrowed it down and decided their Coconut Cupcake was my favorite. In reaction to this, of course, I came home and experimented towards the re-creation.

I am using a Duncan Hines® Moist Deluxe® Classic Yellow Cupcakes cake mix. Preheat to 350℉. To bake the normal cake you need 1/2 Cup Water, 3 Tbsp Vegetable Oil, & 2 Large Eggs. To add the inspirational Coconut taste into the cupcake, I used 2 Tbsp of Bagged Coconut to give it that Hawaiian flavor. (If you have coconut flavoring or extract, I would use 1 Tbsp). Fill the baking cups 2/3. I found the cute cups I used from http://www.bakeitpretty.com

Bake for 20-23 MIN.




For my cupcakes I used a decorating frosting, but you can also use a simple buttercream frosting adding 2 Tbsp of of coconut or 1 Tbsp of flavoring.

Then you can sprinkle coconut on top!
(these cupcakes are best on the day they are made)
